Boquerones en Vinagre

Spain left many lasting impressions; one of which was eating “Boquerones en vinagre” at every Tapas bar we frequented. These are White Sardines marinated in vinegar and served with fabulous Spanish oil.
My husband found a place in Torrence “La Española Meats” that sells many Spanish imported delights such as “jamón ibérico”, “chorizo”, and the one thing I could eat daily “boquerones”.

You can serve them at cocktail hour with simply oil, or today I put them in my salad.
*butter lettuce
*mushrooms
*scallions
*grape tomatoes
*Spanish Oil
*salt/pepper
*2 lemons squeezed over salad
*boquerones
*shaved parmesean

Served with sliced baquette toasted and white/red glass of wine.
Wine is optional of course, but in Spain everyone has a glass of wine with lunch. A custom we adhered to rather quickly.
